In Mexico it was difficult to find Water Chestnuts so we substituted the Water Chestnut with Jicama. Later, after some searching, we found a tin of Water Chestnuts. I have to say, I preferred the taste of the fresh Jicama. Otherwise a fantastic recipe. Maked again for the second time with the Water Chestnuts. Definitely a keeper recipe, but next time to be made with Jicama.

Worth noting. One can of tuna isn't enough if you use two eggs. I made these but ended up with a eggy water mess that wouldn't hold its shape so I added another tin of tuna and they turned out amazing.

if you go to publix you can get basically everything. i legit went today and got the tuna, ginger, spring onions (or you can use scallions), cilantro, the chili pepper, and eggs, and i couldn't find the kaffir lime leaves but a good replacement is lime zest

Oh my goodness. I don't want to, but I just loath this man's kitchen presence. He exudes such arrogance, oozes an incredibly undeserved ego. Like a puss filled sore. Any semi-experienced cook with the same quality of ingredients, with a reasonably good supply of pots and burners and ovens, could do just as well without ever seeing Mr. Ramsay. Ever. This is my problem with all of his videos. There is no meaningful substance, little in the way of actual culinary education here. Nothing to bring my cooking to 'the next level'. Just an overwhelmingly pathetic attitude of, "you can try this at home, but you will never be as good at it, or as sexy, as I."

He removes the seeds of the chilly from the recipes he doesn't want as spicy yet the part of the chilly that is spicy isnt the seeds its the inner membrane (white part) of the chilly where the seeds are connected to. The seeds do in fact contain some heat to them because they are in contact with the membrane so it might make a difference.

Very true. There's a huge difference between using canned stuff at home and making a good meal versus using canned stuff and charging a premium for it. In fact I think often his bigger complaint is that they are SAYING it's fresh, and charging a price as though it was fresh.

Canned tuna, fresh ginger, cilantro, scallions, chili pepper, fish sauce, salt, pepper and 2 eggs.

The sauce is sugar, 2 tbsp fish sauce, 1tbsp rice wine vinegar, cilantro.

When I make these I use 2 cans of tuna. Produces about 8 or so cakes depending on how big you make them

+akkifakki It is usually overused. I find that a little goes a very long way. But to answer you, it does remind me of soap in large quantities. When eating out, I avoid dishes that use it heavily. When I use it, it is chopped very fine and only a very small amount is used.

If you have a cat, save the water from the tuna can in a large measuring cup, rinse the can with water afterwards and pour into the cup, add a bit more water, stir it up and pour into an ice tray and freeze. They're like little popsicles for cats. My Siamese loves them. One can makes about 1 tray of ice cubes without being too diluted.

Just made these and they smell so vibrant.  Be careful on seasoning since some canned tuna might already be salted. Fish sauce is really salty and you don't want to put more salt in addition to that. Thank you, Gordon Ramsay!

Made these tonight and I tried topping them with a little tzatziki sauce to kind of balance out the spicy.  And wow, they were incredible.  Or as Gordon would say, brilliant.

I always make my fish cakes with canned tuna and deb potato...plus other bits I put in them as well.  They are so yummy. They are also great cold.

Nope, it did not come out well! I am giving up on canned tuna cooking. I understand that the use of incorrect measurement may change the taste of a recipe. Unfortunately, I had to revise the recipe a little bit since I did not have any kaffir lime leaves and I couldn't find any in the nearby stores previously. Instead, I used a teaspoon of fresh lime zest, a couple of crushed dried bay leaves with 3 cans of 5oz canned tuna since using two eggs made the mixture too soggy. The mixture was still soggy, so I added about a tablespoon of breadcrumbs and a tablespoon of all purpose floor to make the mixture stick together. I also have to say that the sauce was just too sour and strong but it made the fishcakes eatable at least. 

Well, if you feel like the way I felt earlier tonight- no desirable ready to eat hot meal at home and the bad weather does not allow you get out of the house-this recipe is something you may try out if you have all the ingredients. I mean it was probably better than eating canned tuna in any other way that I knew but because this recipe is from MasterChef Ramsey, my expectation was very high. 

On a side note, I used to live on canned tuna during my college years. I used to work out a lot and I needed additional protein.  I remember of consuming hundreds of small cans of tuna per year for some years. So, I am familiar with what canned tuna taste like.  Not any longer though! Anyhow, fishcakes might be served in bread with some toppings that you would normally get for a sub; but still, avoid serving it to your guests.

+FallaciousScotsman When you want to make stuff like meatballs or fishcakes there is no real point in having super high quality fish/meat because it doesn't really make a difference. If you want to use fresh tuna, you should just cook the fillet.

These are amazing, I have cooked them 3 times already. Adding one egg at a time helps not to make the mixture to soggy.

Thank you Chef, this looks amazing.  I was wondering if you could substitute Tuna for Fresh Salmon steak as I don't particularly go for canned staple food?  If so, should I pre cook the salmon (fry or steam)??

In all honesty tuna is better for you in almost every way, even the canned stuff. The fish are pretty close when it comes to fat content and flakiness so I doubt there'd be a difference in the recipe.

Followed to a T..... but mine fell apart. I used two eggs to bind yesyesyesyes... I drained the tuna and pressed out etc.... but they still fell apart. Another point too,I did not seed the chilli and it still tasted a little bland.. although not as bland as the fragrant rice recipe. Anyone know how to stop them falling apart? They are not spicy.

Okay... a few suggestions. Third fourth time getting better. Recommend you just take the tuna in your hand and squeeze the tuna till most juice is gone. Then place the mixture in the fridge. More hand to hand tossing too. Throw in some chilli flakes.. try green chilli .. and throw in a small red mouse chilli. (don't deseed).. report back latter on this ... my latest attempt.. Oh yeah, slicing the Kaffir lime leaves is tricky.

I can safely say mine didn't look like that. Although the only ingredient i didn't have was water chestnuts, couldn't find them (which ironically he said you can find in any supermarket) my mix seemed really wet, not sure if i added too much fish sauce? or too much tuna, or didn't dry the tuna out enough. I also added more eggs after this because the mix didn't seem to bind with the 2 eggs, any ideas?

You said yours was too wet then mentioned you added extra egg? These patties aren't getting super packed together like a meatball. They're supposed to be a little loose, just tight enough that they don't fall apart. I would go back to 2 eggs, maybe throw in a couple tablespoons of panko. I wouldn't go squeezing out your tuna more, making it completely dry isn't going to help anything.

I had the same problem the first time I made them. Just dry out the tuna well and squeeze the excess egg out after you've formed them otherwise they'll be too wet. Make sure your heat is high enough and let them brown before flipping and they should bind.
